‘Tis the Season for Pumpkin Muffins!

I (Sarah) found this most wonderful recipe on Muffin Top and modified it to make these yummy-wummy treats.  They only took 15 minutes to mix up and 30 to bake.  So fast and well worth the trouble!

PUMPKIN MUFFINS
Makes 1 dozen

INGREDIENTS:
1 1/2 cups all-purpose flour
1 tsp baking powder
2 cups cooked, cooled, mashed pumpkin (a 15-oz can will do nicely if you haven’t time to make your own pumpkin purée)
1/3 cup vegetable oil
2 large eggs
1 tsp pumpkin-pie spice (I love Pampered Chef Cinnamon Plus)
1 1/4 cups sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon mixed with 1 Tbsp sugar

Muffin pan with 12 cups

Sugar for dusting pan

DIRECTIONS:
Preheat oven to 350F. Grease or spray muffin cups and dust with regular granulated sugar.

Whisk together flour and baking powder in a small bowl.

Whisk together pumpkin, oil, eggs, pumpkin-pie spice, sugar, baking soda and salt in a large bowl until smooth, then whisk in flour mixture until just combined.

Divide batter among sugared muffin cups, then spinkle tops with cinnamon-sugar mixture. Bake until golden brown and a wooden toothpick inserted into center of muffin comes out clean, about 30 minutes.

Cool in pan 15 minutes, then transfer muffins from pan to rack and cool.

  1. I love the smell of pumpkin pie, but always when I decide yet again to taste that yummy smell I am reminded that I do not like pumpkin pie! I think this recipe sound wonderful!!! I do believe I will make it and at least I will enjoy the smell of it baking in the oven, maybe the rest of the family will have no problem eating it. Thanks for sharing!
